Chicken Waldorf Sandwiches

Ingredients

1          -           Can                  Crushed Pineapple in Juice (20 ounce)

2          -           Whole              Chicken Breasts (cooked, skinned, chunked)

1          -           -                       Red Apple (cored, chunked)

1          -           Cup                 Walnut Pieces

1          -           Cup                 Sliced Celery

-           1/3       Cup                 Green Onion

1          -           Cup                 Mayonnaise or Miacle Whip

1          -           Tbs                  Poppy Seeds

-           1/2       Tsp                  Vanilla Extract

-           1/2       Tsp                  Fresh Grated Lemon Rind

8-10     -           -                       Pita Bread Rounds

-           1/2       Cup                 Raisins (Optional)

 

    • Drain pineapple well, pressing out excess juice.  Reserve ¼ cup of juice.
    • In a large bowl, combine pineapple, chicken, apples walnuts, celery and onion.
    • In small bowl, whisk together mayonnaise, reserved pineapple juice, poppy seed, vanilla and lemon peel.
    • Pour over chicken mixture and toss well.
    • Serve in halved Pita Breads.
